  1. To make the caramel, in a saucepan, combine all of the ingredients and whisk together over medium heat. Let the caramel simmer over medium heat for 6-8 minutes until it coats the back of a spoon. Remove from the heat and pour into a mason jar or heatproof container and let cool.
  2. Scoop vanilla ice cream into a cup and then drizzle with caramel and pour a hot shot of espresso over the top.
Serve immediately and relax. You deserve it.
