MIGHTY CHOCOLATE COOKIE RECIPE

INGREDIENTS

  • 40 g MIGHTY Oat M.lk Powder
  • 75 ml Water
  • 125 g Vegan Butter
  • 175 g Light Brown Sugar
  • 1 tsp Vanilla Essence
  • 300 g Plain Flour
  • 1.5 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Sea Salt
  • 300 g Dark Chocolate Chips (or smashed up chocolate)

INSTRUCTIONS

1.

Stick the vegan butter, vanilla and sugar in a mixing bowl and beat until creamy (or use a stand mixer).

Add the Baking powder, bicarbonate of soda, flour and salt. Beat together until combined

3.

Smash up the chocolate and fold into the dough mixture

4.

Separate the cookie dough into 65g balls then chill them in the fridge for at least an hour or pop them in the freezer

5.

When you’re ready to bake them pre-heat your oven to 180.C

6.

Line a couple of baking trays with greaseproof paper and place the cookies on the trays (keep them well space out to allow for them to spread as they cook)

7.

Bake for around 10 minutes, carefully remove them from the oven and leave to cool on the baking tray for around 25 minutes.

8.

Then you’re ready to make a brew and devour them.
