MIGHTY SCONES RECIPE
INGREDIENTS
- 450g self raising flour
- 90g caster sugar
- 110g vegan butter
- 60g sultanas (or dried fruit of your choice)
- 1tsp vanilla bean paste
- 200ml Mighty Oat Milk*
- 40g icing sugar
- 10ml boiled cooled water
INSTRUCTIONS
- Pre-heat the oven to 200C fan.
- In a large mixing bowl, sift the sugar and flour together, then rub in the butter until you have a breadcrumb consistency.
- Stir in the dried fruit.
- Make a well in the centre and pour in the milk and vanilla.
- Fold together as briefly as possible, until you have a uniform texture.
- Turn out onto a lightly floured surface.
- Using a rolling pin if necessary, or just your hands, shape the dough into a thick disc.
- Slice into 8 even wedges.
- Bake for 15mins.
- Allow to cool.
- Mix the icing sugar and water to make a glaze.
- Brush over the cooled scones.
